A visit from our friend, New Zealand Chef Peter Gordon, to Otahuna led to the discovery of this extraordinary recipe. Modified now, it remains one of our all-time favourites. Using estate-grown chilli, Kaffir lime leaves, galangal and lemongrass—alongside 8 other ingredients—this intense but balanced combination of flavours deliciously lingers on the palate. Use it to add the perfect bit of heat to duck and pork dishes. Turn a Thai salad of eggplant and beef into a masterpiece. Or, wow guests with a small dollop atop a grilled scallop or prawn and discover the perfect way to start an evening to remember.
